Roasted Salmon with Pomegranate Butter Sauce
Mmm...butter sauce.
ingredients
- 4 salmon filets, skin on
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/4 cup bottled pomegranate juice
- 1/4 cup hearty red wine, such as Syrah-Canbernet
- 1 tbsp shallot, minced
- 1/4 tsp fresh rosemary leaves, chopped
- 4 tbsp unsalted butter, chilled, cut in to 4 equal portions
