Roasted Salmon with Pomegranate Butter Sauce

Mmm...butter sauce.

ingredients

  • 4 salmon filets, skin on
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup bottled pomegranate juice
  • 1/4 cup hearty red wine, such as Syrah-Canbernet
  • 1 tbsp shallot, minced
  • 1/4 tsp fresh rosemary leaves, chopped
  • 4 tbsp unsalted butter, chilled, cut in to 4 equal portions
