Coconut Flour Muffins - Gluten FreeSarah Herr
- 6 eggs
- 4 T. coconut oil
- 1/2 cup honey or maple syrup
- 1/2 tsp. sea salt
- 1/2 c. coconut flour
- 1/2 tsp. baking powder
- 1/4 c. unsweetened shredded coconut
Preheat oven to 350 degrees.
Grease 12 muffin tins with additional coconut oil.
In a small bowl beat eggs, coconut oil and salt together.
Combine coconut flour and baking powder together and whisk into batter until smooth.
Fill prepared muffin cups half-way with batter and sprinkle coconut on top. Bake in preheated oven for 10-15 minutes.
*Can also add in 1/2 c. mini chocolate chips.
