  • Grilled Corn, Avocado and Tomato Salad with Honey Lime Dressing:
  • 1 pint grape tomatoes
  • 1 ripe avocado
  • 2 ears of fresh sweet corn
  • 2 tbsp fresh cilantro, chopped
  • Honey Lime Dressing:
  • Juice of 1 lime
  • 3 tbsp vegetable oil
  • 1 tbsp honey
  • salt and pepper,
  • 1 clove garlic, minced
  • Dash of cayenne pepper
Save a shopping List


Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit for 10-15 minutes to let flavors mingle. Enjoy.

could also add: 2-3 tbsp feta cheese 4-5 leaves of basil. chopped

    Wasn't sure how it would go with my seared scallops. It was the bomb. I did use parsley as, I'm one of those who think cilantro tastes like soap. And, thyme instead of basil. (Just because I use basil in so many recipes.) Definitely a keeper!

    Made this for our July 5th dinner - not everyone could make it on the 4th. I doubled it and it was still gone with only 6 people eating. My next favorite summer salad. We will definitely eat it again.

    Made this for our Fourth of July dinner and it was fantastic. The person who said it was an explosion of summer flavors had it right. The only thing I did differently was that I used a combination of basil and flat leaf parsley because I forgot to get cilantro. Glad I did, too. Thought those herbs complimented the flavors of the corn and tomatoes more nicely than cilantro would have, anyway. This is definitely a new summer favorite.
