Georgia Van Dusen’s Rolled Herb Chicken Breast with Basil Mayonnaise

ingredients

For the chicken rolls:
  • 8 halves of chicken breasts
  • 1 cup of bread crumbs (Italian flavored)
  • 1/2 small onion minced
  • 1 clove garlic pressed
  • Cup and 1/2 of fresh herbs (basil, thyme, rosemary, flat leaf parsley, sage, marjoram) minced together
  • Two eggs slightly beaten
  • Coarse salt and pepper to taste.
For the basil mayonnaise:
  • 3 egg yolks at room temperature
  • 3/4 teaspoon dry mustard
  • 1 1/2 teaspoons red wine vinegar
  • 2 and 1/4 cups light olive oil (or regular)
  • 1 and 1/2 cups of firmly packed fresh basil leaves
