Kiss Yo' Mama Soup

This hot soup was the favorite of Johnny Earles, chef and owner of Criolla’s in Grayton Beach, Florida. I’ve found that the soup’s flavor doesn’t change much by using the canned green chilies. Also, as the chipotle chilies are very hot, just reduce the quantity to your taste. Spicy, wonderful combination of flavors so good it’ll make you Kiss Yo’ Mama!

ingredients

  • 1 stick unsalted butter
  • 1 medium onion, chopped
  • 7 cups fresh or frozen corn
  • 2 medium-size chipotle chilies, soaked in warm water, drained and chopped (substitute canned chipotles if necessary)
  • 2 large poblano chilies, roasted, peeled, and chopped, or 1/2 cup canned green chilies
  • 1 cup chicken stock
  • 3 cups whole milk
  • 8 ounces sour cream
  • 1/2 pound Louisiana crawfish tails
  • Salt to taste
  • 1/4 cup fresh goat cheese (chevre type)
  • 2 tablespoons chopped fresh chives
