If only three breasts, pound until thin as cutlets.
ingredients
- 1 lb boneless chicken breasts
- 1/2 tsp salt
- 2 Tbs reduced calorie mayonnaise
- 1/2 cup plain dry breadcrumbs
- 1 large tomato, cut into eight slices
- 1 Tbs olive oil
- 8 basil leaves
- 1/2 cup shredded part-skim mozzarella
- 1 Tbs grated parmesan cheese
