Potato and Onion Frittata
ingredients
- 4 large eggs
- 1 medium yellow onion, peeled and thinly sliced
- 2 oz pancetta or prosciutto, diced
- 1 cp potatoes, peeled, diced
- 1/3 cp freshly grated Parmesan-Reggiano cheese
- 2-3 tbsp of extra virgin olive oil
- Salt to taste

Note: You can add whatever vegetables you’d like to this. I especially like adding red bell peppers. You can also use left-over baked/broiled potatoes or American-style ham or bacon instead of prosciutto
