Lusty Cheesecake
The beauty of this cheesecake is that you don’t have to have a springform pan to make it — just bake it in an ordinary 9-by-13-inch pan, cut into squares and serve.
ingredients
Crust- 1 (12 oz) box vanilla wafer cookies
- 1 Tbsp granulated sugar
- 1 tsp cinnamon
- 1/3 c (5 Tbsp plus 1 tsp) butter, melted
- 5 lg eggs, separated, at room temperature
- 1 1/2 c granulated sugar
- 3 (8 oz) packages cream cheese, at room temperature
- 1 tsp vanilla extract
- juice of 2 lemons
- 1 c heavy cream
- 1/4 c all-purpose flour
