Our Favorite Lemon Ice Box Pie

Lemon Ice Box Pie or as Chase called them when he was a kid... “Lemon Oxbox” pie is hands down my favorite dessert. It is also one of the best food memories of my childhood. And while I don’t lick the bowl anymore, who can resist eating at least one spoonful of the Eagle Brand Milk! Yummmm! P.S Many a good pie has been ruined by meringue so I opt for topping it with Cool Whip if anything at all. For an extra special treat use Meyers lemons. In season November- January, Meyer’s Lemons are a cross between a true lemon and a mandarin orange and have a subltly sweet flavor.
