For surprise muffins add half batter to the tins then a teaspoon of jelly then the remaining batter to make the tins 2/3 of the way full. Bake as directed.
- 2 Tablespoons sugar
- 2 Cups Bisquick mix
- 1 egg
- 3/4 Cup milk
- 1 Cup fresh berries (optional)
Preheat oven to 400 degrees.
Blend all ingredients except berries until well blended then blend vigorously for 30 seconds. Fold in berries. In a well greased or paper lined muffin tin add batter till 2/3 of the way full.
Bake 15 minutes.
Orange muffins: use 1/2 Cup orange juice in place of 1/2 of the 3/4 Cup milk. Butterscotch Pecan Muffins: Place 1 1/2 tsp butter, 1 1/2 tsp brown sugar and 2 or 3 pecan halves in each of the 12 muffin tins then add the batter.
