Kerry's Tiramisu CannoliKerry Hicks
Sometimes cannoli shells are a little hard to find..but this is SO worth it. Serve with hot coffee or coffee flavored ice cream.
- 12 pre-made cannoli shells
- 6 egg Yolks
- 1 1/4 cups white sugar
- 3/4 tsp instant coffee, crushed to powder
- 1 1/4 cups mascarpone cheese
- 1 3/4 cups heavy whipping cream
- 1 Tbsp Kahlua or Bailey’s (optional)
- chocolate syrup
- mini chocolate chips
Combine egg yolks and sugar in the top of a double boiler, over boiling water. Add in instant coffee. Reduce heat to low, and cook for about 10 minutes, stirring constantly. Remove from heat and whip yolks until thick, about 2 or 3 minutes.
Add mascarpone to whipped yolks. Beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture. Cover and refrigerate for 4 hours.
Fill cannoli shells with mixture. This is easily done with a pastry bag.
Set in serving dish or tray, side by side. When finished decorate with powered sugar and cocoa or drizzle chocolate syrup and sprinkls with mini chocolate chips. Cover and refrigerate 1 hour before serving.
If you don't have a pastry bag, you can use a zip-lok bag with one corner cut off. It's a little messy, but it works.
