Grandpa Francisco used to make this alot especially to take to dinners.

- 2 lbs frozen hashbrowns
- 1 big onion (diced)
- 2 cans cream of chicken soup
- 1 package cream cheese
- 1 container sour cream
- 16 oz grated cheese (sharp cheddar is good)
- Jalepeno peppers (optional)
Preheat oven to 350 degrees
Mix soup, cream cheese and sour cream together and set aside.
In a large casserole dish put a layer of potatoes, chopped onion, **jalepeno peppers, a layer of shredded cheese then a layer of the chicken soup mix. Do this until all ingredients have been used putting aside enough cheese for the top. Sprinkle remaining cheese on top
