ingredients

  • 1/4 c olive oil
  • 1/2 large yellow onion, sliced
  • 2 large yellow squash, cut in half lengthwise and sliced in 1/4-in pieces
  • 1 large zucchini, cut in half lengthwise and sliced in 1/4-in pieces
  • 1 c heavy cream
  • 8 oz grated sharp cheddar cheese
  • 2 c panko (Japanese bread crumbs)
  • 1/4 Tbsp salt
  • 1/8 tsp white pepper
  • 1/2 sleeve Ritz crackers or 1/2 c panko to top
  • 1/2 c fried onions (optional)
