Hearty Chicken Tortilla Soup
If you can’t find the canned corn with peppers, I substitute 1 cup of frozen sweet corn and 1/4 each red and green bell peppers, chopped. Add that to the broth and bring to a boil then add the rice.
ingredients
- Vegetable cooking spray
- 1 lb boneless chicken breasts, cut into one inch pieces
- 3 1/2 cups chicken broth
- 1 tsp ground cumin
- 1/2 cup uncooked regular long-grain rice
- 1 can (11 oz) whole kernel corn with red and green peppers, drained
- 1 cup Salsa
- 1 TBSP chopped fresh cilantro
- 2 TBSP fresh lime juice
- Crisp tortilla strips
