Macaroni and CheeseCarla Snyder
- 1/4 cup butter
- 1/4 cup enriched flour
- 1/2 tsp. salt
- 3 cups milk
- 1 cup grated cheddar cheese
- 8 ounces Elbow macaroni
- 1 1/2 cups grated cheddar cheese
Preheat oven to 375°F. Melt butter in large saucepan. Blend in flour and salt. Gradually add milk, stirring constantly; cook until sauce is thickened. Add 1 cup grated cheese and stir until melted.
Cook macaroni in boiling, salted water until tender. Drain. Add to cheese sauce and mix well.
Turn mixture into greased, 8-inch square baking dish or pan. Sprinkle top with 1 1/2 cups grated cheese. Bake in moderate oven (375°F.) about 15 minutes.
Remove from oven and place under broiler until cheese is bubbly and lightly browned.
