Ingredients

  • Cake:
  • 2 & 1/2 cup self-rising flour
  • 1 cup buttermilk
  • 1 & 1/2 cup vegetable oil
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/4 cup (2 one oz bottles) red food coloring
  • 1 & 1/2 cup granulated sugar
  • 1 tsp unsweetened cocoa powder
  • 1 tsp white vinegar
  • 2 large eggs at room temperature
  • Frosting:
  • 1 & 1/3 stick butter, softened
  • 10 oz cream cheese, softened
  • 1 lb powdered sugar
  • 2 cups chopped pecans

    Preheat oven to 325 deg.

    Mix all ingredients together in mixer. Spray cake pans with spray. Pour batter into 3 pans and bake for 20 minutes. Cool in pans on rack for 10 minutes.

    Combine butter, cream cheese, and sugar. Beat until fluffly. Ice cakes including inbetween layers. Top with pecans. Refrigerate 1 hour before serving.
