Katie’s Potato Rolls

  • 1/2 cup 105 degree water
  • 1 pkg dry yeast
  • 1 cup mashed potatoes
  • 1 1/2 cups potato water
  • 2/3 cups sugar
  • 1 cup shortening
  • 1 tbsp salt
  • 2 well beaten eggs
  • 8 cups sifted all purpose flour

Allow yeast to soften in water. Combine potato, potato water, sugar, shortening, salt. Add to mixture when lukewarm: yeast, eggs (beaten) and 4 cups of flour. Sift in all but 1/2 cup of flour. Knead. Brush with melted butter. Let rise till double. Make 3 balls of dough and place in each muffin cup. Brush with melted butter. Let rise till double. Bake at 400 degrees for 20 minutes.
