Fried Zucchini - A Nonna SpecialtyJulie
- 2 large zucchini
- 1 cup flour
- 2 eggs
- 1/2 bottle beer
Slice zucchini into 1/8 inch thick slices. Using a paring knife, cut centre cirles out of zucchini leaving the zucchini in small rings. Prepare batter by mixing flour, eggs and beer. Add more flour or beer if required, batter should be the consistency of pancake batter.
Heat oil in pan to high. Dip zucchini individually into batter, and add to fry pan. Turn after 2 minutes, and continue to fry until nicely browned. Remove to a plate and salt to taste.
