Rollatini di Pollo

  • 2 lb of thin chicken cutlets
  • 1 bag of frozen spinach
  • 1/4 lb of diced pancetta
  • 4 eggs
  • 1 small onion
  • 1 cup of breadcrumbs
  • 1/2 cup of shredded mozzarella
  • 1/4 cup parmigiana cheese
  • 1 tbs of butter

    Let spinach defrost and squeeze out excess liquid until dry.

    Finely dice the onion and saute in the butter for a couple minutes. Add chopped spinach and let cook for another 2 minutes then let cool.

    Combine eggs (just yolks, put whites aside), parmigiana, spinach and mix.

    Wash and lay out chicken cutlets, add diced pancetta then sprinkle mozzarella cheese. Place spinach mix towards the front/center of the cutlet, add more mozzarella cheese and begin to roll. Fold the flaps in and make sure the chicken is rolled tightly.

    Mix eggs whites & 1 yolk, add a little water to make a wash. Brush wash over the rolled rollatini then dip into the bread crumbs, be sure to cover evenly.

    Place rolled rollatini into a coated baking tray, cook at 400 degrees for 20 minutes.
