This is an easy treatment for potatoes, although you have to plan ahead a pit because it takes a while to cook.
- 2-3 medium russet potatoes, cut into pieces no larger than 3/4" square (don’t bother to peel them)
- olive oil
- Seasonings (you can use just about anything you want here. For a traditional mix use seasoned salt, rosemary, cajun seasoning, thyme, and oregano. Alternatively, you could go an Indian route and use ground coriander, garam masala, cumin, and a little cayenne)
