Cajun Red Beans and Rice

servings:Makes 5


  • 2 T. olive oil
  • 2 (3-ounce) chicken andouille sausage links, chopped
  • 1 (8-ounce) container onion, bell pepper, celery mix
  • 1 1/2 t. salt-free Cajun seasoning
  • 3/4 t. salt
  • 1/2 t. dried oregano
  • 2 garlic cloves, minced
  • 1 (15-oz) can red beans, rinsed and drained
  • 1/4 c water
  • 1 (14.5 oz) can no-salt added diced tomatoes
  • 1/4 t pepper
  • 4 cups hot cooked long-grain rice


1. Heat oil in a large nonstick skillet over med-high heat. Add sausage and onion mix, saute 4 min. Add cajun seasoning, salt, oregano, and garlic to pain, cook 1 min, stirring constantly. Partially mash beans with a fork. Add beans, 1/4 c water, and tomatoes to pain, bring to a boil. Reduce heat and simmer 10 min or until thickened. Remove from heat, stir in pepper. Serve over rice.
