Stir-Fried Beef with Basil (Neua Pad Kraprow)
Holy basil, bai kaprow, gives this dish authenticity and a snappy, spicy aftertaste. Holy basil is hard to find in the United States except in midsummer, when it thrives. Other basils can be substituted, but first try the authentic version. There is a holy difference. Instead of beef, prawn, pork, or chicken can be substituted.
ingredients
Beef and Marinade- 1/2-3/4 pound beef loin, thinly sliced (2 cups)
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1 tablespoon Maggi seasoning or soy sauce
- 2 tablespoons vegetable oil, more as needed
- 1 bunch holy basil bai kaprow, leaves only (about 2 cups)
- 3 tablespoons minced garlic
- 3 tablespoons minced shallot
- 2 tablespoons minced Thai chilies, more or less to taste
- 1 1/2 cups julienne carrot
- 1 1/2 cups sliced long beans or string beans, 1 1/2-inch long
- 1 cup julienne color bell peppers
- 2 tablespoons fish sauce nam pla
- 2 tablespoons oyster sauce, more to taste
- 2 tablespoons granulated sugar, more to taste
- 2 teaspoons rice vinegar
- 1 tablespoon beef base or bouillon (optional)
