Barbecued Pork (Moo Yang)

Pork is a popular choice of meat in Northern cuisine. This is the easiest way to prepare it, using four basic seasonings for the paste: garlic, cilantro or coriander, pepper, and salt or fish sauce. Charcoal grilling over an open flame intensifies the flavors of all the ingredients and adds smoky essence and an appetizing charred appearance. A sweet hint of smoked coconut in the marinade invites a mouthwatering feast.

ingredients

  • 1/2-3/4 pound pork loin or tender loin
  • 2 tablespoons chopped garlic
  • 2 tablespoons chopped cilantro roots or stems
  • 1 tablespoon ground coriander
  • 1 teaspoon ground pepper
  • 2 tablespoons granulated sugar
  • 2 tablespoons fish sauce nam pla
  • 1 tablespoon Maggi seasoning
  • 3 tablespoons coconut cream hua kati (optional)
  • 1 package bamboo skewers (optional), soaked in water
