Swiss Chard Gratin

ingredients

  • 1 lb. Swiss chard, stemmed
  • 2 T olive oil
  • 2 garlic cloves, minced
  • 1/4 t red pepper flakes
  • Salt and pepper to taste
  • 4 oz. butter
  • 1/4 c flour
  • 2 c milk
  • Pinch of ground nutmeg
  • 3/4 c grated Parmesan cheese
  • 1/2 c butter, cubed

    1. Preheat oven to 400°F.

    2. Blanche the chard briefly in boiling water, drain and run under cold water.

    3. Sauté chard in olive oil with salt, pepper, and red pepper flakes, then set aside.

    4. Melt butter, add flour and cook three minutes, stirring. Add milk and cook thick. Season with salt, pepper, and nutmeg.

    5. Heap chard into a greased casserole dish. Ladle sauce over top. Sprinkle with cheese, dot with butter and bake for 25 minutes.
