In case they ever get tired of Strata, here’s a great runner-up!

- 1 lb. pork sausage
- 1 8oz. can refrigerated crescent rolls
- 2 c. shredded Monterrey jack or Cheddar cheese
- 1/2 c. of a green pepper, chopped
- 7-9 eggs
- 3/4 - 1 c. of milk
- 1/2 tsp. dried oregano
- 1/4 tsp. pepper
Cook sausage, drain. Unroll crescent rolls and line the bottom of a greased 9x13 pan. Bring crescent rolls up 1/2 inch on each side of pan. Sprinkle sausage over dough. Top with shredded cheese and green pepper. Combine remaining ingredients and pour over casserole. Bake 400° for 18-20 minutes.
