Dark Chocolate and Cardamon Pudding with Sweet Basil Avocado Guacamole

ingredients
- Pudding:
- 1 can coconut milk (440 ml)
- 4 eggs
- 100 G brown sugar
- Green cardamon pods - ground and sieved
- 200 G dark chocolate (70% or more)
- Avocado and Sweet Basil Guacamole:
- 1 ripe avocado
- 1 tbsp chopped sweet Thai basil
- Juice of 1 lime
- 2 tbsp sugar

Pudding

1) Melt chocolate in saucepan over simmering water

2) Mix all ingredients with a whisk

3) Pour mixture into small rice bowls/ramicans and steam until set (approx 45 minutes)

Guacamole:

1) Cut avocado lengthwise and scoop out the flesh

2) Mash the flesh with lime juice and sugar until disolved

3) mix in the basil and spoon a large dollop on top of the chocolate pudding; serve
