Jam Cake
A delicious and moist cake, from the kitchen of Jeanette Lindsey (Grandmom). Another wonderful cake we often ate around the holidays or other celebrations.
ingredients
- 5 eggs
- 2 cups sugar
- 1 cup shortening (or butter)
- 1 cup buttermilk or sour milk
- 1 cup wine (optional)
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoon cloves
- 1 1/2 teaspoon allspice
- 3 cups flour
- 1 teaspoon baking soda
- 1 cup nuts (optional)
- 1 cup raisins or dates
- 1 cup jam
- Buttermilk Icing
- 1 cup butter
- 3 cups sugar
- 1 cup buttermilk
- 2 teaspoons light corn syrup
- 1 teaspoon baking soda
