I had three rotting bananas, which means of course that banana bread has to be made :) However, I wanted more like a five-banana-like texture for my bread, so as I reached for the applesauce, I had a thought PEARS! I had two overripe pears about a month ago that I’d tossed, whole, into my freezer, irritated that I’d let them go bad. I microwaved them in a shallow bowl of water for about a minute, then sliced and mashed them in with the bananas. The scent of bananas and pears baking together is so beautiful, and rather unique.

ingredients

  • 3 overripe bananas
  • 2 overripe pears
  • 3/4 c brown sugar
  • 3/4 c flax seed meal
  • 1/4 c low fat milk
  • 1/4 c low fat sour cream
  • 1 egg white
  • 2 c whole wheat flour
  • 1 t baking soda
  • 1/2 t salt
