Spinach Squares

  • 2 packages of frozen chopped spinach
  • 1 lb. fat free cottage cheese
  • 1/3 cup fat free feta
  • 8 oz. Egg substitute
  • 1/4 cup scallion
  • 3 tablespoons butter or butter substitute
  • 2 tablespoons parmesan cheese
  • 1 tablespoon flour
  • 1/2 teaspoon salt
Save a shopping List

    Thaw and drain spinach

  • 2

    Combine with egg, cottage cheese, feta and scallion

  • 3

    Add butter, flour and pepper

  • 4

    Grease 9x9 pan

  • 5

    Pour into pan and sprinkle with parmesan cheese

  • 6

    Bake at 350 for 50 minutes
