Coffee Braised Pot Roast with Carmelized Onions
ingredients
- 4 lb beef chuck roast, trimmed
- 1/2 tsp salt
- freshly ground pepper to taste
- 4 tsp EVOO
- 2 large onions, halved and sliced
- 4 gloves garlic, minced
- 1 teaspoon dried thyme
- 3/4 cup strong brewed coffee
- 2 tbsp balsamic vinegar
- 2 tbsp cornstarch mixed with 2 tbsp water

This can be made in slow cooker - 4.5 - 5 hours on high heat or 7-8 hours on low heat. Reduce coffee to 1/2 cup - all other ingredients remain the same
