Pecan Puffs or Mexican Wedding Cookies
The recipe calls for pecans but walnuts are just as good if not better.
ingredients
- 1/2 cup butter
- 2 Tbsp sugar
- 1 tsp vanilla
- 1 cup pecan meats
- 1 cup cake flour
- Powdered Sugar
directions
Preheat oven to 300° Beat butter until soft, add sugar & blend until creamy, add vanilla. Measure then grind in a nut grinder, food processor or chop finely with a knife the pecans. Stir pecans into butter mixture and sift in flour. Roll the dough into small balls, place balls on greased cookie sheet & bake about 30 minutes. Roll while hot in powdered sugar to coat. To glaze, put the sheet back in the oven for a minute.
