Vegan Marble Cake with "Buttercream" Frosting

My brother sent this to me, he said it was a huge hit at a party.
ingredients
Vegan Marble Cake- 4 C non-dairy milk
- 2 tbsp. apple cider vinegar
- 2 1/4 C sugar
- 1 C oil (canola, safflower, vegetable)
- 1 tbsp. vanilla
- 4 C all purpose four (organic if you can)
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 tbsp. chocolate extract (optional)
- 1 tsp. almond extract
- 1/2 C cocoa powder
- 1/3 C black cocoa powder Hershey’s has a Special Dark cocoa powder that can be found at a grocery store
- 1/2 C soy margarine - softened
- 1/4 C soy milk
- 3 C veganized powdered sugar
- 1 1/2 tsp. vanilla
- Variations:
- Berry Frosting - Add 1/4 cup mashed fresh or frozen berries
- Chocolate - Add 1/2 cup cocoa powder or 1/3 cup melted vegan chips
- Coffee - Substitute cold coffee or espresso for the soy milk
- Mocha - Substitute cold coffee or espresso for the soy milk in the recipe and add 1/4 - 1/3 cup cocoa powder or 3-4 tbsp. melted vegan chips

Preheat oven to 350°. Grease and flour pan.

Mix the milk with the vinegar together and allow to curdle for a couple of minutes. Whisk the milk mixture, oil, sugar and vanilla together until well blended.

Sift flour, salt, baking soda, baking power into the wet mixture, adding 1 cup at a time. Stir until everything is incorporated. Do not overmix.

Split the batter in half. Leave one half to be the vanilla, the other will be the chocolate. In half the batter mix in chocolate and almond extracts, followed by sifting in the cocoa powders. Mix until everything is just blended.

Pour the vanilla half and spread evenly in the pan(s). Pour the chocolate mixture over the vanilla mixture in random areas throughout the pan(s).

Run a butter knife in vertical and horizontal strokes two or three times through the batter to create the marbled effect.

Bake 350° for 1 hour or until toothpick comes out clean.

Cool and frost.
In mixing bowl, cream soy margarine and milk together until smooth. Add half of the sugar and beat well to combine. Add the remaining ingredients and continue to beat the mixture until light and fluffy.
