French Onion Soup

ingredients
- 4 tablespoons butter
- 6 large Spanish or Vidalia onions, peeled and thinly sliced
- 4 cloves fresh garlic, peeled and chopped
- 1/2 teaspoon granulated sugar
- 1 cup dry white wine
- 1/2 teaspoon thyme leaves
- 8 cups (2 quarts) beef or chicken stock, preferably homemade (or canned low-sodium chicken stock)
- Salt and pepper to taste
- 8 slices French bread, sliced 1/2 inch thick and toasted
- Gruyère or Swiss cheese grated (about 8 ounces)
