Crab on English Muffins

A brunch favorite on our boat the “MV Independence.”

Pepper relish:
  • 1 jalapeno pepper, finely chopped without the seeds or veins

  • ½ tsp sugar

  • 1 tbsp vinegar

  • 1 tbsp yellow onion, finely chopped

Crab muffin:
  • 1 lb. fresh picked crabmeat

  • ¼ C mayonnaise

  • ¼ tsp garlic powder

  • ¼ tsp Old Bay seasoning

  • 2 tbsp pepper relish

  • 4 slices sharp cheddar cheese

  • 2 English muffins

  • 2 tbsp butter

  • To make relish: Mix the above ingredients together and let sit for at least 30 minutes or more.

  • Preheat oven broiler.

  • In a bowl gently mix crab, mayonnaise, garlic powder, pepper relish, and Old Bay seasoning.

  • Split English muffin’s in half, toast muffin and spread butter on toasted muffin.

  • Divide the crab mixture into equal portions and place a portion on top of browned English muffin and cover each with a slice of cheddar cheese. Place crab muffins on a baking pan and broil in oven until cheese starts to melt. Serve immediately.
