A brunch favorite on our boat the “MV Independence.”
1 jalapeno pepper, finely chopped without the seeds or veins
½ tsp sugar
1 tbsp vinegar
1 tbsp yellow onion, finely chopped
1 lb. fresh picked crabmeat
¼ C mayonnaise
¼ tsp garlic powder
¼ tsp Old Bay seasoning
2 tbsp pepper relish
4 slices sharp cheddar cheese
2 English muffins
2 tbsp butter
To make relish: Mix the above ingredients together and let sit for at least 30 minutes or more.
Preheat oven broiler.
In a bowl gently mix crab, mayonnaise, garlic powder, pepper relish, and Old Bay seasoning.
Split English muffin’s in half, toast muffin and spread butter on toasted muffin.
Divide the crab mixture into equal portions and place a portion on top of browned English muffin and cover each with a slice of cheddar cheese. Place crab muffins on a baking pan and broil in oven until cheese starts to melt. Serve immediately.

TOTAL TIME: 45 min
