Baked Bean Trio
It seems that someone always brings beans to a potluck; and this is one of them recipes that are passed around from potluck to potluck. It always seems to be a potluck favorite. It’s also a favorite of ours as a meal in itself. We’ve brought it down to the boat but rarely make it on the boat because it requires oven baking. On the Independence starting up the oven makes the whole boat hot so you don’t want to use the oven in summer, but on those cold cruising days it’s great.
ingredients
- 1 lb. ground beef
- 1 C onion – chopped
- 1/4 lb. sliced bacon
- 1 C green pepper – chopped
- 1 T vinegar
- 1 T yellow mustard
- 3/4 C brown sugar, packed
- 1/2 C ketchup
- 1 15oz. can baked beans
- 1 15oz. can kidney beans, drained
- 1 15oz. can white beans, drained
directions
Fry ground beef and drain off fat. Sauté together bacon, onions and peppers; draining off the fat when done – onions and peppers should be soft. Mix the ground beef with the bacon sauté along with the cans of beans in a large baking dish. Bake uncovered in a 350°F oven for 1 hour.
