California Meatloaf
This is a spicy, zesty version of meatloaf. It’s full of spicy flavor and a bit different than traditional meatloaf. It’s even better the next day after the spices have had a chance to “settle” making for an absolutely great meatloaf sandwich. We don’t make California meatloaf on the Independence because it requires baking.
ingredients
- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 1 1/2 tsp salt
- 1 1/2 tsp oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground clove
- 1/4 tsp ground black pepper
- 1/8 tsp ground cardamom
- 1 lb. ground beef
- 1 lb. ground pork
- 2 eggs
- 1 C bread crumbs
- 3 cloves garlic – minced
- 1 jalapeno chili – chopped fine

Preheat oven to 350°F.

Heat a skillet with olive oil, add the next nine ingredients (spices), and sauté until the onion is clear, about seven minutes. Transfer the sauté mix to a large bowl and add the remaining ingredients (ground beef and pork, eggs, etc.). Mix well and spoon into a 9”x5” loaf baking dish. Bake for one hour. Remove juices that accumulate on top (save for excellent spicy gravy) and bake 15 minutes more.

We like to serve the meatloaf with homemade mashed potatoes and gravy made from the meatloaf.
