Asian Barbecued Oysters
Grilling oysters is traditional Pacific Northwest fare. It’s very simple. Simply put the whole Oyster in the shell on top of the grill and wait until it just pops open. Peel the top shell off and add a touch of butter or Tabasco sauce and eat. It’s great. However, a great variation is to cook the Oysters with this exotic Asian sauce. Try it and I’m sure you too will grill a few this way too.
ingredients
- 1 C water
- 4 tbsp rice vinegar
- 4 tbsp sugar
- 5 tbsp fish sauce
- 1 tbsp garlic, finely chopped
- 1 tbsp shredded carrot
- 2 jalapeno peppers finely chopped
- 2 tbsp fresh lime juice
- 2 dozen extra small or small Oysters, shucked and placed on the half shell
directions
Boil water with sugar. Let cool until warm. Add garlic, peppers, and lime juice and stir in fish sauce. Place oysters in warm sauce and slightly poach. Remove Oysters and place back into half shell with a teaspoon of sauce and grill until edges curl. Serve immediately.
