  • 2 1/2 cups penne (pre cooked)
  • 2 tsp olive oil
  • 1/4 cup cubed roma tomatoes
  • 1 Tbl diced red onions
  • salt and pepper
  • 1 oz baby spinach
  • 1 oz fresca sauce
Fresca Sauce
  • 1/4 cup fresh garlic
  • 2 tsp slat
  • 1/4 cup balsamic vinegar
  • 1/4 cup sweet white wine
  • 1 cup EVOO

In a very hot pan saute the first 4 ingredients. Sear the noodles stirring occasionally until steaming hot. Add the next two ingredients. Toss to combine, serve with freshly shaved Parmesan cheese.
