Red Pepper Relish
Many of our recipes use red pepper relish. We prefer to simply purchase Bick’s Red Pepper relish. Unfortunately Bick’s relishes are a Canadian product found only in Canada. If you get the chance to visit Canada, make sure you stop in a grocery store and pick up a jar or two of Bick’s Red Pepper Relish – you’ll be glad you did. However, if you want to make your own red pepper relish here’s how. Red Pepper Relish is also great when spread on top of crackers with spread with cream cheese.
ingredients
- 6 red bell peppers, seeded and finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- 1 small yellow onion, finely chopped
- 1 clove garlic, minced
- 1 tsp salt
- 1 tsp yellow mustard seeds
- 1 C cider vinegar
- 1 1/2 C sugar
- 2 tbsp cornstarch
directions
Combine all ingredients in a medium saucepan and simmer over medium-low heat, uncovered for 45-60 minutes – stirring occasionally until thickened. Let cool before serving.
