Angels on Horseback
Angels on Horseback is the more poetic name for Oysters en Brochette, or more aptly skewered Oysters wrapped in bacon. And, how could you possibly go wrong with Oysters and Bacon? For best results, use extra small Pacific oysters. I prefer to serve the oysters along with a rice pilaf or a simple pesto with fettuccine along with some fresh sautéed green beans with lemon.
ingredients
- 2 dozen extra small shucked Pacific Oysters
- 1 dozen strips of thick sliced bacon, cut in half
- 2 T Teriyaki sauce
- 1 t lemon juice
- 1 clove garlic, chopped very fine
- 1 pinch of Cayenne pepper
- 1 dozen bamboo skewers
directions
Place shucked oysters in a bowl with lemon juice, garlic, and Cayenne pepper. Mix well and let sit for 10-15 minutes. Wrap each oyster with a piece of bacon and place three oysters to a skewer, keeping them tight together. Place skewers on grill and lightly baste with Teriyaki sauce. Cook until bacon starts to crisp and edges of Oysters begin to curl. Serve immediately.
