Thai Green Curry Shrimp

We enjoy oriental dishes and especially those that are so flavored with spices and curry. We especially enjoy green curries. While we recognize you could probably make your own green curry paste, we just purchase a commercially available green curry paste and use it instead. It’s faster and easier.

  • In a large wok or sauté pan, heat the peanut oil over medium-high heat. Add the chopped onion, bell pepper, carrots, and garlic and stir-fry until soft, about 2-3 minutes. Add the curry paste and cook, stirring, until fragrant, about 30 seconds to 1 minute. Add the fish sauce, and coconut milk and cook, stirring until the coconut milk begins to boil. Simmer until thickened slightly. Add the shrimp, and cook until shrimp are done about 3-5 minutes. Remove from heat and add basil and cilantro and serve hot with rice.

notes:

If your green curry paste is not hot, but if you want to spice it up and make it hotter, add some crushed red pepper when sautéing the onion and garlic. Photo note: Jumbo Spot prawns in a bowl caught in Loughborough Inlet, BC.
