Singapore Prawns and Noodles
Generally when we anchor at Montague Harbor we run over to the town of Ganges on Salt Spring Island. Ganges has great eclectic grocery store with all sorts of imported and exotic foods. One of them was a package of noodles called “Singapore Noodles” and all you need to do is add shrimp or chicken. I really enjoyed it and so invented my own Singapore Noodles with Prawns recipe.
ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tbsp chopped yellow onion
- 1 tsp garlic powder, or 1 clove garlic – minced
- 1/4 C chopped red sweet bell pepper – diced
- 1/4 C carrot – chopped fine
- 2 tbsp curry powder
- 2 tbsp sweet vermouth/mirin
- 2 tbsp soy sauce
- 2 tbsp Red chili sauce (sambal oelek)
- 2 lbs. prawns
- 2 C cooked spaghetti
directions
In a large pan, melt butter and olive oil over medium heat. Add onion and garlic and sauté until onions are clear or soft. Add carrots, peppers and cook them for two minutes. Add red chili sauce, curry and vermouth/mirin, mixing well and cook for another minute. Add prawns and sauté until cooked or thoroughly heated. Add pasta and mix well. Pour soy sauce over prawns and noodle mix and mix thoroughly.
