Potato Pancakes
Potato pancakes are a big favorite both at home and on our boat the Independence. They are great for breakfast or for dinner. They’re incredibly easy to make and very tasty. I coarsely grate the potatoes when making them for breakfast so they resemble hash browns, and finely grate the potatoes when having them for dinner. Of course potato pancakes are always welcome with schnitzel or pork chops, but did you know they go great for breakfast too? Top a potato pancake with bacon and a fried egg – it’s great.
ingredients
- 4 - 6 medium Yukon Gold potatoes
- 1/2 yellow onion
- 1 tbsp Montreal Steak seasoning
- 1 egg
- 2 tbsp flour
- 2 tbsp olive oil or vegetable oil for frying
directions
Grate potatoes and onions into a bowl. Add seasoning. Add egg and flour and mix well. Heat skillet with olive oil to medium hot and spoon about 2-3 tablespoons of potato mixture per each patty or pancake. Cook pancakes for 3-5 minutes per side, or until pancakes are browned on both sides.
notes
When making potato pancakes it’s best to use a more waxy grained potato (Yukon Gold) versus a more grainy potato like a Russet. Picture note: Relaxing on the Independence.
