Spaetzle with Cheese
These great, little noodles are easy to make. The batter is simply very thick crepe batter. Traditionally spaetzle are served with butter and Swiss cheese, but I like spaetzle with any rich brown gravy. My guess though is if you try the below recipe with cheese you’ll never go back to traditional mac-n-cheese.
ingredients
- Spaetzle:
- 2 eggs
- 1/4 C milk
- 1 C flour
- 1/4 tsp salt
- pinch baking powder
- 2 tbsp butter
- 1/2 C shredded Swiss cheese
- 1/4 tsp white pepper
- 1/4 tsp nutmeg
- 1/2 tsp salt

Bring a pot of salted water to a boil over high heat. In a separate container, beat eggs with milk and slowly add flour and spices until mixed well and batter is thick and smooth. Have a metal pie pan with several holes drilled in it ready. I like the holes to be bigger than 1/4” in diameter. Pour batter into pie pan above the pot of boiling water and force the batter through the holes using a spatula. The batter will drop into the pot with boiling water. When spaetzle begin to float, use a slotted spoon to pick up the cooked spaetzle. Place spaetzle in a colander to continue to drain.

Working quickly, put the hot, freshly cooked spaetzle in to a large bowl and thoroughly mix with the butter until the butter completely coats the spaetzle. Add spices and mix well. Then add the grated Swiss cheese and mix gently until the cheese is thoroughly mixed with the spaetzle. Serve immediately.
