Blueberry Clafouti
This is great refreshing dessert recipe - the berries sit on top of a wonderful custard. It’s simply delicious.
ingredients
- 1 tbsp butter
- 3 C blueberries, rinsed and picked over
- 4 eggs
- 1 C milk
- 1 C sugar
- 1 tsp vanilla extract
- 2 tbsp Grand Marnier or Cointreau
- 3/4 C flour
- pinch salt

Preheat oven to 350° F. Butter a glass baking pan (about 8 x 10”) and place blueberries on bottom of pan.

In a medium bowl, beat eggs and add sugar; continue whisking mixture until mixture thickens. Add milk, vanilla, and liquor and whisk to combine. Add flour and salt and continue whisk until mixed well. Pour mixture over berries.

Bake on center oven rack until clafouti has puffed and the center bounces back when lightly pressed, about 45 minutes. Remove from oven and allow to cool. Cut into squares and when plating dust lightly with powdered sugar and serve.
