Chewy, macaroon-type cookies reputed to be Santa’s favorites.

ingredients

  • 1/2 C unsalted butter softened
  • 1 C sugar
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 tsp rum flavoring
  • 1 1/4 C flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 C chopped walnuts or pecans
  • 1 C chocolate chips
  • 1 C sweetened grated coconut
  • 1 C finely chopped mixed candied fruit

    Preheat oven to 350 degrees. Grease baking sheets

    In a large bowl of mixer, cream butter and sugar until light and fluffy. Add egg, vanilla and rum flavoring.

    Sift together flour, baking soda and salt; add to egg mixture. Stir in nuts, chocolate, coconut and fruit.

    Drop batter by heaping teaspoons 2 inches apart onto baking sheets. Bake for 13 to 15 minutes (less for chewy cookies, more for crispy) or until golden. Transfer to racks to cool.
