Maria’s Deviled Eggs

Recipe is for 9 whole eggs.


  • Hard Boiled Eggs - as many as you want.
  • 1/2 tsp mustard or more if you like more mustard flavor
  • 2 heaping tbsp or more of sour cream (the Hungarian national vegetable)
  • Salt & Pepper
  • Red Paprika (the other Hungarian vegetable)

    Remove the shell from the eggs.

    Cut eggs in half and remove the yolks from the whites. Do this gently as the whites can tear.

    In medium bowl, mash egg yolks to fine consistency (use a large tined fork). They will start to clump together a bit.

    Add mustard, sour cream, salt and pepper to taste. Mix until consistency is soft and smooth but doesn’t have to be pulverized.

    Scoop small amount back into each half shell of egg. Sprinkle with Paprika & refrigerate for a while to let them set up a little.
