Spanish Style Round Steak
Konrad loved to make this in the pressure cooker, the recipe is for making the dish on top of the stove. I am afraid of the pressure cooker, Konrad wasn’t!!! Most of the time, we never added the peas and pimientos, only the black olives. Then we would sprinkle parmesan cheese on top.
ingredients
- 1 1/2 lbs. round steak
- 2 tbsp. oil
- 1/2 C onion - chopped
- 1 clove garlic - minced
- 1 - 12 ox. bottle V-8 juice
- 1 - 10 1/2 oz. can beef broth
- 1 1/3 C white rice
- 1 - 10 oz. frozen peas
- 1/4 C chopped pimento
- 1 can small black olives - drained

Cut round steak in 1/4" strips, sprinkle with salt and pepper. In large pan brown meat in the oil. Add onion and garlic. Cook until onion is tender but not brown.

Add V-8 juice, broth and 1 1/3 cup water. Bring to boil and reduce heat. Cover and cook 30 minutes.

Stir in rice, peas, pimento and olives. Return to boil and reduce heat, cook until meat is tender and rice is done, about 25 minutes.
