Eggplant Cavier
This is so good, I love it warm, but it also is delicious chilled and served on cocktail bread.
ingredients
- 2 large eggplants
- 2 tbsp. olive oil
- 2 large onions - chopped fine
- 2 cloves garlic - minced
- 2 6 oz. cans tomato paste
- 2 medium green peppers - chopped fine
- 2 tsp. white vinegar
- salt and pepper to taste
