Banana Bread
ingredients
- 2 1/2 cups flour
- 1 cup sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 3 Tbs. vegetable oil
- 3/4 cup milk
- 1 egg
- 1 cup chopped walnuts (optional)

Heat oven to 350°. Grease and flour 9-inch loaf pan or two 8-inch loaf pans. Mix all ingredients in large mixing bowl. Do not over-mix.

Pour batter into pan(s). Bake 55 to 60 minutes, or until wooden toothpick inserted in ceter comes out clean. Remove from pan; cool thoroughly before slicing.
notes
For chocolate chip-banana bread: Substitute 1 cup mini-chocolate chips instead of nuts if desired. For cranberry-banana bread: Substitute 1 cup fresh or frozen chopped cranberries instead of nuts.
